Product: Gardein dijon chicken breasts Price: $5.99 for two chicken breasts Verdict: 4/5 -If done correctly! Alright, when I first tried these from the directions on the box, I was not a fan. They are already marinated in a light dijon sauce, and they also come with a big packet of dijon sauce as well, which I usually ditch because I don&#8217;t like the taste of it. I&#8217;ve cooked these a few ways, on the box it says to microwave them, I really didn&#8217;t like them that way, they pretty much just tasted like soggy tofu. (Yum!) So instead, I did some playing around and I highly recommend turning on your BBQ, defrosting your &#8216;chickens&#8217; in the microwave, getting out your favorite BBQ sauce and seasoning, and putting on your party pants because these turn out d-e-licious! I seasoned mine with a light smokey-BBQ sauce, and then added Montreal Steak spice to it when they were almost finished. Serve it up with some potato salad and some root-beer and you have yourself a party! (To go with your party pants perhaps?)

Vegan Blueberry Muffins

What you’ll need:

  • 3/4 cup whole wheat pastry flour
  • 3/4 cup unbleached white flour
  • 1/2 cup cornmeal
  • 1 Tbsp. baking powder
  • 1/4 tsp. sea salt
  • egg replacer (equivalent to 1 egg)
  • 1 cup rice or soy milk
  • 1/3 cup maple syrup
  • 1 cup fresh or frozen blueberries

Preheat oven to 350 F.

Mix all dry ingredients. In another bowl, mix all the wet ones. Stir the wet into the dry without over-mixing. Oil a muffin tin and spoon in the batter, filling the cups 2/3 full. Bake for 20 to 25 minutes.

I’m totally trying these, I have an entire long weekend to eat these bad boys up.

Pita Pizza From Rutabegorz in Fullerton, CA.
I hadn’t had anything that resembled a pizza in months and lately I’ve been craving it, problem solved when I took my mom to her first dinner at Rutabegorz! This veggie-loaded pizza was made up of a whole wheat pita, meatless marinara sauce, artichoke hearts, zucchini, red onion, black olives, tomato, and bell peppers. 


This looks freaking amazing. I&#8217;m going to make pizza now.
