I finally made biscotti!! Some of them are covered in a homemade royal icing glaze, others are covered in chocolate, and the rest are left plain.. but they’re not as pretty!

Adding avocado to an otherwise blasé sandwich is a surefire way to add some taste and nutrition to your lunch. Before I actually sat down and ate an avocado sandwich I never really had any desire to try it out- I clearly didn’t know what I was missing. When I happened upon one of these little delights at a small bistro in a town near me, I figured I may as well try it (not to mention there wasn’t anything else vegetarian on the menu- don’t you hate that?)
This simple sandwich only contained a few simple ingredients;
It had only one piece of lightly toasted bread bread with a thin layer of goat cheese spread evenly over it and a few slices of avocado placed neatly on top. The texture of the crunchy bread with the creamy goat cheese and the soft avocado is enough to die for!
You could play this up a bit and add a slice of fresh tomatoes, or even simply adding a dash of salt and pepper would give it a little extra ‘umph’.

Anyone who is vegetarian or vegan knows how pricey your grocery bill can get after picking out a few veggie dishes to indulge in. I definitely know how tempting it can be to fill your cart with tasty chick’n or faux-beef treats. Unfortunately, processed veggie foods also come packed with sodium and preservatives- leaving these delicious treats to be eaten in moderation. However, this certainly doesn’t mean your meals are going to be bland or boring. With a few simple ingredients you can make your own veggie treats without all of the unnecessary preservatives! Veggie Burgers A basic veggie burger recipe includes a few simple ingredients: Brown beans,vegetables of your choice (finely chopped), a few of your favorite herbs and spices, and a little bit of oatmeal to hold it all together! (For the non-vegans, I sometimes throw in an egg so it holds together better!) *All I do to make this is crush the beans in a large bowl, throw in the finely chopped veggies, mix in the herbs and spices, and add in the amount of oatmeal you think it needs to hold it together! These cook best when they are frozen in individual patties first, and then cooked however you like.* -The best part about this recipe is you can make several different things with it! Crumble it for tacos, add tomato sauce for spaghetti and ‘meat-sauce’, throw it together in a taco salad- the possibilities are pretty much endless, just let your imagination do all of the work! Veggie ‘Steak’ Sometimes the vegetables and potatoes on my plate just don’t measure up to what I’m wanting. However, a slice of extra-firm tofu, some tasty marinading sauce, a fewsauteed onions and mushrooms, and a BBQ will do the trick! -To make this, first I drain all of the water from my tofu piece for about 15 minutes (by sitting it on a towel, setting a pan on it, and then setting something heavy on it) and then I set in a bowl of my favorite marinading sauce, making sure each side gets about 10-15 minutes. Then I simply BBQ it until its nice and crispy, put on the sauteed onions and mushrooms and wa-la! Just like most foods, veggie products are made for convenience, which definitely comes in handy on the days you just don’t feel like cooking an intricate meal. But like all processed foods, be sure to only eat them in moderation, and instead opt out for a simple home-made version! ;)

It’s not like I can even complain. It’s all mostly healthy, and not to mention, it’s food.
Well I’m off to go make a soymilk smoothie with strawberries, yogurt, banana, and spinach!

I usually make my own veggie burgers (I’ll post my recipe soon!) but I wanted something I could just throw on the BBQ or my George Forman grill and let it do all of the hard work. Well, I most definitely found the ultimate in veggie cuisine, let me tell you!
Yves has always been my favorite veggie brand, but these most definitely make me love them even more. There is four burgers in each box, and it costed me around $4.50, which could seem a little steep for only four burgers, but it is so worth it I promise!
I like to cook it until its slightly crispy, although they are pre-cooked so you just have to warm them up, its just my personal preference. The I douse it with a ton of BBQ sauce (just like every other thing I cook) and add on a thousand veggies and VOILA’!
My brother made crepe’s for supper last night!
Strawberries and organic dark maple syrup with a touch of powdered sugar on top.
