Adding avocado to an otherwise blasé sandwich is a surefire way to add some taste and nutrition to your lunch. Before I actually sat down and ate an avocado sandwich I never really had any desire to try it out- I clearly didn’t know what I was missing. When I happened upon one of these little delights at a small bistro in a town near me, I figured I may as well try it (not to mention there wasn’t anything else vegetarian on the menu- don’t you hate that?) 
This simple sandwich only contained a few simple ingredients;
Avocado 
Goat cheese spread (You could easily Veganize this by simply skipping the goat and and adding your favorite Soya cheese- I usually do this anyways)
Your favorite type (flavor?) of bread- I like 12 grain or sometimes if I’m feeling really wild I have cheesebread
It had only one piece of lightly toasted bread bread with a thin layer of goat cheese spread evenly over it and a few slices of avocado placed neatly on top. The texture of the crunchy bread with the creamy goat cheese and the soft avocado is enough to die for! 
You could play this up a bit and add a slice of fresh tomatoes, or even simply adding a dash of salt and pepper would give it a little extra ‘umph’.
